speculoos cookie crust
makes enough for one 8 or 9 inch pan
6 ounces speculoos cookies
2 tablespoons sugar
4 tablespoons unsalted butter, melted
Preheat the oven to 325 degrees F.
Process the cookies and sugar in a food processor until broken up into fine crumbs.
Add the melted butter and pulse until the crumbs look evenly coated and resembles wet sand.
Press the crumbs into firmly into the bottom of a 9 inch springform with the smooth bottom of a ramekin or dry measuring cup.
Bake for 12 - 15 minutes, until fragrant and brown.
